
For a quick benedict
3 Egg Yolks 1/4 cup of melted butter ~1 tbsp Lemon Juice ~1/4 teaspoon salt
Blend yolks with immersion blender. Slowly incorporate warm butter. Salt and lemon to taste. Let sit on counter while prepping rest of meal, stir occasionally. Nuke for 20 seconds on low before serving. Serve with a sprinkle of paprika or cayenne pepper on top for garnish.
